Perfect Paleo Pancakes
What is it about Pancakes?
There is certainly something incredibly nostalgic and comforting about the thought of pancakes. I think it’s the smell of cinnamon that conjures up images of our childhoods. Being given pancakes on cold, rainy afternoons by a dear grandmother or the smell of pancakes waking you up on a Sunday morning for breakfast is something many of us think of, when we think of pancakes or even just get whiff of the smell of cinnamon.
My Zaide (grandfather) made the most amazing latkes (pancakes), when I was a child. He was originally from Lithuania and having fled persecution, he settled in South Africa. He used to make all of the grandchildren his amazing latkes regularly on Sunday afternoons.
Nostalgia
Food for so many of us is about good memories and ways of showing love. That is what can make the Elimination phase of the AIP so difficult. That sense of ‘deprivation’, is more emotional than physical. Of course there is no deprivation, but many people mistakenly believe that it is.

I had a few unsuccessful attempts at reintroducing eggs, and wrote about my joy at reintroducing them to make my Paleo Carrot Cake.
I have been experimenting for a while to find a nice, easy paleo pancakes recipe, that doesn’t use complicated ingredients and is easy to make. This is my recipe for Perfect Paleo Pancakes. Please note it is not elimination phase compliant, as it used eggs.
I also don’t eat these for breakfast. I still eat my protein, fat and veggies for breakfast, as I don’t like spiking my blood sugar. But in my opinion, these make a great afternoon tea pancake and you can have them savoury or sweet.
Ingredients
- 1 cup Cassava Flour (For SA customers get Cassava Flour)
- 1 tsp baking powder (3 if using this corn free SA baking powder that I used )
- 1/4 tsp baking soda
- 1free range egg ( or 2 which will make it richer)
- 1 1/2 cup coconut milk I like this one as it's a thin coconut milk which helps make the pancake lighter.
- 1T melted coconut oil
Instructions
- Mix dry ingredients in a bowl. Whisk in wet.
- Pour mixture into a jug
- Heat oil in pan and pour off any excess oil
- Pour mixture into pan into medium size pancakes or any size of your choice
- Swirl around so that the mixture spread evenly
- Flip when it begins to bubble
- Cook on the other side briefly until it is cooked through
- Serve with cinnamon and a little brown sugar or some plain fruit.
